Help! Buying in Florida, Moving to North Carolina.

Hello. My wife and I have been missionaries for the last two years in Africa. We are coming back to the US next month to Florida and hope to buy a car there. We will be visiting family in Florida and Oklahoma until December, when we are moving to North Carolina to begin school for our master's degrees. If we buy a car in Florida in October or November but intend to register it in North Carolina in December, what should we do? This question is for both car insurance and registration.
